Cast Iron Steak

**Tomorrow, Wed’s 5pm class has been canceled! All other classes will run as usual!**
As revenge for Marcus getting dibs on Brian’s Thanksgiving Tirade, I’m posting a delicious recipe he gave me a while back. We had just gotten a cast iron skillet and had a hard time seasoning it. We tried coating and baking it at high heat but ending up just proving our smoke detectors were in great working condition. We tried baking it in our new bbq grill, but also to no avail. Finally, we just started cooking our bacon in it to build the carbon coating.
Marcus mentioned another way to season the pan by cooking steaks in it. What? Forced to cook steak? I guess we had no choice but to clear out TJ’s steak section and oh so begrudgingly get to work. The result? A nice glassy coating on our pan and delectably rare steak charred to perfection.
Here’s what you need:
Cast iron skillet
2 Steaks (organic, grass-fed)
2 Cloves garlic
Salt & pepper
1. Preheat oven to broil
2. Crush garlic clove and rub on both sides of steak
3. Salt and pepper (and any other herbs/spices)
4. Broil 2 min per side (3 minutes if the steak is thicker)
Voila. Top with blue cheese, butter, sauteed mushrooms, or caramelized onions. Thanks Marcus!

Hmmmm….Ruth, any tips for properly seasoning a nice new Wok? We just received a nice hammered Wok that I am very excited to start using. I followed the instructions and started seasoning it last night with olive oil on medium heat. We are going to try our first meal in tonight. Finger’s crossed!!
I have no comment about 1 Min AMRAP Pistols. I just call dibs on all 4 black bands!!
