Pork Chops, Apples and Kraut

Ingredients:
- 2 packages of Trader Joe’s Frenched Cut Pork Chops (4 chops total, weighing ~2lbs. — you want 1” thick chops, not the thin ones)
- 32oz bag of sauerkraut (don’t use canned)
- 2 large apples (I used 4 smaller fuji apples from the farmer’s market)
- 1/4 cup raisins
- 1/4 cup chopped pecans
- 1/4 tsp nutmeg
- 1/4 tsp cinnamon
Directions:
- Heat oven to 350F, grease a 13 x 9 dish with coconut oil
- Brown the pork chops on all sides, transfer to dish
- Core and coarsely chop the apples, place in medium bowl
- Drain sauerkraut, add to bowl along with raisins, pecans and spices
- Mix ingredients in bowl thoroughly, then place evenly over the pork chops in dish
- Cover dish with foil and place in oven to bake for 1 hour
- Remove and dig in!
