Sausage and Peppers

Anna sent this quick and easy recipe a couple months ago and it’s become one of my favorites in the rotation. The sauce turns out pretty thick and tastes amazing. You can make this as Whole30 compliant as you want, by omitting the cheese and being careful about your choice of sausage. Basically you want to use a raw sausage that you can remove from the casing or for the cleanest of ingredients, make your own!
Ingredients:
- 1 package Italian sausage
- 3 bell peppers, sliced lengthwise (Anna suggests the tri-colored pack from TJ’s)
- 1 small red onion
- ½ can tomato puree
- 2 tbsp olive oil
- Salt, pepper and red pepper flakes to taste (I like to use garlic salt)
Directions:
- Heat oil in skillet.
- Add Sliced bell peppers and sprinkle with salt, pepper and red pepper flakes to taste.
- While the bell peppers are cooking, chop the onion and add to the skillet.
- Let simmer 10 min until the onions/peppers are soft.
- Add sausage to skillet, squeezing the meat out of the casing and chop it up with a spoon.
- Simmer until sausage is cooked through.
- Add tomato puree, stir and cook 5 more min.
- Optional: top with Parmesan cheese

About the event:
This dinner and a movie night has been in the making for over a year, the organizers are trying to make this the largest event they have ever had. Main street from Mariposa to Oak will be completely shut down for this event. The entire street in front of the High school will be filled with dinning, beer garden, fire dancers, live music, and even an obstacle course for the kids.
The movie “Ultimate Wave Tahiti is an IMAX 3D film that has been shown in the California Science Center for the past year, among many other venues nation wide. It is far more then a surf film, it is a travel documentary about one of the most beautiful places on earth its people, and gives an inside look into Kelly Slater, 10X World Champion, who some say is the Greatest Athlete in the world today.
