After getting my 2 pound shipment of shredded coconut from Tropical Traditions, I’ve been looking for more coconut recipes to try. This one, posted on Joyful Abode, is on my to do list for this weekend!

Coconut-Raisin Breakfast Cookies
(Sugar Free, Grain Free, Gluten Free, Dairy Free)

Ingredients:

  • 2 cups shredded coconut
  • handful of raisins (3 Tablespoons or so)
  • 1/3 cup almond butter (unsweetened)
  • 1/2 cup unsweetened apple sauce
  • 2 eggs
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • pinch of salt
