Nick got a great chicken recipe from our Italian friend at work and he modified it to be paleo friendly and it turned out great. This chicken recipe is one of my favorites that Nick makes because the chicken stays so moist, and who can resist sweet potatoes.

Ingredients:
- 1 package of boneless, skinless chicken thighs
- 2 medium sized sweet potatoes
- 4 cloves of garlic
- olive oil

Peel the two sweet potatoes and dice them into small cubes and smash the garlic cloves. Pour olive oil into pan and turn onto medium heat and add smashed garlic cloves. Pat the chicken thighs dry and throw into pan on top of garlic right away. Add a pinch of salt and pepper and then throw on the sweet potatoes. Cover the pan and cook on medium heat for about 10 minutes.

Flip the chicken over, keeping it on the bottom of the pan and cover and cook on medium heat for another 10 minutes. Once the 10 minutes is up, the sweet potatoes should be well cooked and you can smash them with your spatula. Turn the mixture until the sweet potatoes are soft and well mashed. You can then serve the chicken and sweet potatoes if you wish, but to make the chicken more “sweet potatoes crusted” follow along to the next step.

Heat another pan with a couple of tablespoons of olive oil on high heat and let the pan get hot. Slide the chicken and sweet potato mixture into the pan and let it sear for 2-3 minutes, and then flip the mixture and repeat. At this point everything should be crisped on the surface and is ready to serve.
