Summer is finally here. Can’t you tell with all of this June Gloom? If you’ve been to a farmer’s market recently, you’ve probably noticed all of the lovely summertime fruit and vegetables in abundance. During the summer months, berries become a staple in my household. Unfortunately, I can’t eat them fast enough and sometimes they go to waste. Recently though, I came across a quick and easy recipe on PaleoPot.com for cold cucumber noodles with strawberry balsamic vinaigrette. The vinaigrette is a great way to use up those strawberries that are starting to get a little soft.

Ingredients:

1 English cucumber

8 medium strawberries, tops removed and quartered

2 Tbsp of balsamic vinegar

1 1/3 Tbsp extra virgin olive oil

1 Tbsp dijon mustard

Pinch of sea salt and black pepper

In the original recipe, they used a spiral slicer to create “noodles” out of cucumber. I don’t have that gadget so I just sliced my cucumber with my mandoline (a knife works just as well too). For complete directions, go here. You can also use this as a salad dressing instead of a dip like I did. I’m sure it would pair well with a spinach salad with fresh strawberry slices, purple onion, egg, bacon and sliced almonds.
